To save some space on your iPhone you need to remember to empty the trash of Mail application.

Depending on your configuration of your Mail, you must eventually do so manually.

1. Open Mail on your iPhone
2. Go to the trash directory
3. Click on 'modify'
4. Click on 'delete everyting', and confirm.

That's all, simple!
