iTunes includes a number of preferences. Unfortunately some of them are hidden.

When importing a CD track number is added to the track name. To remove this number enter the following line in the terminal:

Type into the terminal:

defaults write com.apple.iTunes create-filenames-with-tracknumber -bool FALSE

You need to restart iTunes in order that the changes take effect.
